Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 2 pounds or 900g)
  • ½ cup (1 stick or 113g) unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • 1½ teaspoons kosher salt, divided
  • ½ teaspoon freshly ground black pepper
  • ½ cup (120ml) low-sodium chicken broth
  • 1 tablespoon freshly squeezed lemon juice
  • Optional garnish: fresh parsley sprigs, lemon wedges, flaky sea salt

Instructions

  1. Make the herb butter: In a small bowl, combine the softened butter, minced garlic, chopped parsley, rosemary, thyme, dried oregano, ½ teaspoon of salt, and the black pepper. Mix with a fork until well combined and fragrant.
  2. Prep the chicken: Pat the chicken breasts dry with paper towels. Season both sides of each breast with the remaining 1 teaspoon of salt.
  3. Slather the butter: Using your hands or a spatula, spread the herb butter evenly over each chicken breast, covering every surface. Place the buttered chicken breasts in the bottom of the crockpot in a single layer.
  4. Add the liquid: Pour the chicken broth and lemon juice around the chicken, not directly over the top.
  5. Cook low and slow: Cover the crockpot and cook on LOW for 3-4 hours, or on HIGH for 1.5-2 hours, until the internal temperature reaches 165°F (74°C) at the thickest part.
  6. Rest and serve: Turn off the crockpot and let the chicken rest in the juices for 5-10 minutes. Transfer to a cutting board and slice against the grain, or shred with two forks. Spoon some of the cooking liquid over the top before serving.

Notes

For best results, cook on LOW rather than HIGH to keep chicken tender. Don’t lift the lid during cooking. To thicken the sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and whisk into hot liquid. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
