Easy Homemade Pumpkin Spice Syrup Recipe for Perfect Fall Lattes

A quick and easy homemade pumpkin spice syrup that brings cozy fall flavors to your coffee, breakfast, or desserts without preservatives or artificial colors.

Ingredients

  • 1 cup (200 grams) granulated sugar
  • 1 cup (240 ml) water
  • 1/4 cup (60 grams) pure pumpkin puree
  • 2 cinnamon sticks
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1 teaspoon pure vanilla extract
  • Optional: 1/2 teaspoon pumpkin pie spice

Instructions

  1. In a medium saucepan, mix 1 cup granulated sugar and 1 cup water. Place over medium heat and stir until the sugar dissolves completely, about 3-5 minutes.
  2. Stir in 1/4 cup pumpkin puree, 2 cinnamon sticks, 1/2 teaspoon ground cloves, 1/2 teaspoon ground nutmeg, and 1/2 teaspoon ground ginger. If preferred, add 1/2 teaspoon pumpkin pie spice instead of individual spices.
  3. Reduce heat to low and let the mixture simmer uncovered for 10-12 minutes, stirring occasionally to prevent sticking.
  4. Remove saucepan from heat and stir in 1 teaspoon pure vanilla extract.
  5. Strain the syrup through a fine mesh strainer or cheesecloth into a heatproof container, pressing gently on the solids to extract all the flavor. Discard the pumpkin pulp and spices.
  6. Let the syrup cool to room temperature, then seal the jar and refrigerate. It will keep well for up to two weeks.
  7. Use 2-3 tablespoons of syrup in brewed coffee or espresso with steamed milk for a pumpkin spice latte, or drizzle over pancakes and desserts.

Notes

If syrup is too thick after refrigeration, warm gently before use. If too thin, simmer a few extra minutes next time. Fresh spices provide better flavor. Store in a sealed glass jar in the refrigerator for up to two weeks. Can substitute coconut sugar or maple syrup for refined sugar and almond or oat milk for water for vegan/refined sugar-free variations.
