Ingredients

Scale
  • 1 pound ground beef (85/15)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn, drained (or 1 ½ cups frozen corn)
  • 1 can (14.5 ounces) diced tomatoes with green chilies (mild Rotel recommended)
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 can (14.5 ounces) tomato sauce
  • 2 cups beef broth (low-sodium preferred)
  • 1 packet (1 ounce) ranch seasoning mix (Hidden Valley original recommended)
  • 1 packet (1 ounce) taco seasoning mix (McCormick mild recommended)
  • Optional toppings: shredded cheddar cheese, sour cream, tortilla chips or Fritos, diced avocado, fresh cilantro, lime wedges

Instructions

  1. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion, breaking up the meat with a wooden spoon. Cook for 6-8 minutes until browned and onion is translucent. Drain excess fat.
  2. Add the garlic: Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Transfer to slow cooker: Dump the browned meat and onion mixture into a 6-quart or larger slow cooker.
  4. Add canned ingredients: Pour in drained black beans, drained kidney beans, drained corn, diced tomatoes with green chilies (undrained), crushed tomatoes, and tomato sauce.
  5. Add broth and seasonings: Pour in beef broth, then sprinkle ranch seasoning and taco seasoning over everything. Stir until well combined.
  6. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Stir and taste: About 30 minutes before serving, stir the soup. Adjust seasonings if needed. If too thick, add more broth; if too thin, cook uncovered for 15-20 minutes.
  8. Serve: Ladle into bowls and let everyone customize with desired toppings.

Notes

For a creamier soup, stir in 4 ounces of cubed cream cheese during the last 30 minutes of cooking. To make ahead, brown the beef and onions the night before and refrigerate. For a vegetarian version, skip the meat and add an extra can of beans. Leftovers keep in the fridge for 4-5 days and freeze well for up to 3 months.
