Easy Lemon Dill Salmon with Creamy Sauce

A quick and easy salmon recipe with a bright, creamy lemon dill sauce. Perfect for weeknights or impressing guests, this dish comes together in about 25 minutes with simple ingredients.

Ingredients

  • 4 salmon fillets (6 oz each), skin on or off
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon butter
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup chicken or vegetable broth
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper, to taste
  • Extra fresh dill sprigs (optional garnish)
  • Lemon slices or wedges (optional garnish)
  • Red pepper flakes (optional garnish)

Instructions

  1. Take salmon fillets out of the refrigerator about 15 minutes before cooking. Pat dry with paper towels. Season both sides generously with salt and black pepper. If skin-on, score the skin lightly with three shallow cuts.
  2. Heat a large skillet over medium-high heat for 2 minutes. Add olive oil and swirl to coat. Place salmon fillets skin-side down (if using skin-on) in the pan. Cook without moving for 4-5 minutes until skin is golden and crispy.
  3. Flip fillets carefully. Add 1 tablespoon butter to the pan, tilting to coat the fish. Cook for another 3-4 minutes for medium, or 5-6 minutes for well-done (internal temperature 145°F). Transfer salmon to a plate and tent with foil.
  4. Reduce heat to medium. Add remaining 1 tablespoon butter to the same pan. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for about 1 minute until slightly reduced.
  6. Reduce heat to low. Slowly pour in heavy cream, stirring constantly. Let simmer gently for 2-3 minutes until sauce thickens enough to coat the back of a spoon. Do not let it boil.
  7. Stir in fresh lemon juice, lemon zest, and chopped dill. Season with salt and black pepper to taste.
  8. Return salmon fillets to the pan, nestling them into the sauce. Spoon sauce over the top. Let warm through for about 1 minute.
  9. Transfer salmon to serving plates, spoon extra sauce over the top. Garnish with fresh dill sprigs and lemon slices if desired.

Notes

Don’t overcrowd the pan; cook salmon in batches if needed. Let salmon rest after searing. Keep heat low when making cream sauce to prevent curdling. Fresh dill is highly recommended over dried. Don’t skip the lemon zest.
