  • 4 salmon fillets, skin-on, about 6 ounces each
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 bunch asparagus spears, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1 pound baby potatoes, halved
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed sheet pan with parchment paper or foil.
  2. Wash and trim the asparagus, halve the cherry tomatoes, slice the red onion thinly, and halve the baby potatoes.
  3. Toss the baby potatoes with a little olive oil, salt, and pepper. Spread them out on the sheet pan and roast alone for about 10 minutes.
  4. In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, dill, thyme, salt, and freshly cracked pepper to make the lemon herb dressing.
  5. Add asparagus, cherry tomatoes, and red onion to the bowl and toss gently to coat with the dressing.
  6. After the potatoes have roasted for 10 minutes, push them to one side of the pan. Spread the coated veggies on the other side.
  7. Place the salmon fillets skin-side down on the pan between the potatoes and vegetables. Brush or spoon the lemon herb dressing evenly over the salmon.
  8. Roast everything together for 12-15 minutes or until the salmon flakes easily with a fork and the veggies are tender but still slightly crisp.
  9. Check doneness carefully; if veggies need more time, remove salmon and roast veggies for 2-3 more minutes.
  10. Serve immediately with an extra squeeze of fresh lemon juice if desired.

Notes

Do not overcrowd the sheet pan to ensure even cooking. Roast potatoes alone for 10 minutes before adding other ingredients. Use fresh herbs and lemon zest for best flavor. Adjust cooking time based on salmon fillet thickness. Toss veggies halfway through roasting for even browning. Rest salmon briefly after roasting for moist texture. Optional toppings include toasted almonds or pine nuts.
