  • 8 ounces thinly sliced deli turkey breast, low-sodium oven-roasted
  • 4 slices provolone cheese (or mozzarella, havarti)
  • 1/2 cup light cream cheese, softened
  • 1 tablespoon Dijon mustard (optional)
  • 1 cup fresh spinach leaves, washed and dried
  • 1 large carrot, peeled and grated
  • 1/2 red bell pepper, thinly sliced into strips
  • 1/4 cup fresh cilantro or parsley, chopped (optional)
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Make the Spread (2 minutes): In a small bowl, combine softened light cream cheese, Greek yogurt, Dijon mustard (if using), lemon juice, and garlic powder. Mix until smooth and creamy. Season with salt and pepper to taste.
  2. Prep Your Veggies (3 minutes): Wash and dry spinach. Peel and grate carrot. Slice red bell pepper into thin strips. Chop fresh herbs if using.
  3. Lay Out the Tortillas (1 minute): Place four tortillas flat on a cutting board. If stiff, microwave for 10-15 seconds to make pliable.
  4. Spread the Base (2 minutes): Divide cream cheese mixture evenly among tortillas, spreading to edges, leaving a 1-inch border.
  5. Layer the Fillings (3 minutes): On each tortilla, layer 2 ounces turkey slices, 1 slice cheese, a handful of spinach, grated carrot, bell pepper strips, and a pinch of herbs. Do not overfill.
  6. Roll It Up (2 minutes): Fold in sides of tortilla (about 1 inch from edges). Starting from bottom, tightly roll tortilla away from you, tucking filling as you go. Spread helps seal edge.
  7. Wrap and Chill (1 minute + optional 30 minutes): Place each wrap on plastic wrap or parchment paper. Roll tightly, twisting ends like a candy wrapper. Refrigerate for at least 30 minutes for best flavor and easier slicing.
  8. Slice and Pack (1 minute): When ready to eat, unwrap and cut in half diagonally with a sharp serrated knife. Pack with an ice pack to keep cool.
