  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) refried beans
  • 1/2 cup salsa
  • 1/2 teaspoon cumin (optional)
  • 1 large bag (about 10 oz) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese (or a mix of cheddar and Monterey Jack)
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes (fresh)
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, thinly sliced
  • 1 avocado, diced
  • Extra sour cream and salsa for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Add diced onion and minced garlic, cook for 2 minutes until translucent.
  3. Sprinkle taco seasoning over the beef, add 1/2 cup water, stir, and simmer for 2-3 minutes until thickened. Remove from heat.
  4. In a small bowl, combine refried beans, salsa, and cumin (if using). Stir until smooth.
  5. Spread a single layer of tortilla chips across the bottom of a 9×13-inch baking dish (about 3-4 cups). Reserve about 1 cup of chips for the top.
  6. Spoon the refried bean mixture over the chips and spread evenly.
  7. Spread the seasoned ground beef evenly over the bean layer.
  8. Sprinkle 1 1/2 cups of shredded cheese over the beef.
  9. Arrange the reserved tortilla chips on top of the cheese layer, pressing gently.
  10. Dollop sour cream over the top chip layer and spread gently. Sprinkle remaining 1/2 cup cheese over the sour cream.
  11. Bake for 15-20 minutes, until cheese is melted, bubbly, and golden brown. Optionally, broil for 1-2 minutes for a deeper golden top.
  12. Let rest for 5 minutes. Sprinkle fresh toppings (tomatoes, olives, cilantro, jalapeño, avocado) over the top just before serving. Serve immediately with extra sour cream and salsa.

Notes

For best results, use sturdy restaurant-style tortilla chips and shred your own cheese. Let the casserole rest for 5 minutes before serving to allow layers to set. Do not add fresh toppings before baking; add them just before serving. You can brown the beef and mix the bean layer up to a day in advance.
