  • 1 box (15.25 oz) yellow cake mix (without pudding in the mix)
  • 1 cup chopped pecans (roughly chopped)
  • 3/4 cup unsalted butter (melted; if using salted, reduce added salt to 1/4 teaspoon)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, eggs, maple syrup, granulated sugar, pumpkin pie spice, vanilla extract, and salt until completely smooth (about 2 minutes).
  3. Pour the pumpkin mixture into the prepared baking dish. Gently shake to level it out. Let it sit on the counter for 5 minutes.
  4. Sprinkle the entire box of yellow cake mix evenly over the pumpkin mixture. Do not stir or pat down.
  5. Sprinkle the chopped pecans evenly over the cake mix layer.
  6. Drizzle the melted butter evenly over the entire surface, covering as much of the cake mix and pecans as possible.
  7. Bake for 45-50 minutes, or until the top is golden brown and the edges are bubbling. The center should be set but still have a slight jiggle. Start checking at 40 minutes.
  8. Let the cake cool on a wire rack for at least 20 minutes before serving.

Notes

Let the pumpkin mixture rest for 5 minutes before adding cake mix for better texture. Melted butter should be warm but not hot. Do not over-pecan; stick to 1 cup. For extra caramelization, mix 2 tablespoons brown sugar into the pecans before sprinkling. A pinch of flaky sea salt before serving enhances flavor.
