These caramelized sweet potatoes are coated in a nutty brown butter and maple glaze, roasted to perfection for a side dish that’s both simple and special. Perfect for weeknights or holiday dinners.

Ingredients

Scale
  • 2 large or 3 medium sweet potatoes (about 2 pounds total), peeled and cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 3 tablespoons pure maple syrup
  • ½ teaspoon fine sea salt, plus more to taste
  • ½ teaspoon cinnamon
  • ¼ teaspoon freshly ground black pepper
  • Optional garnish: fresh thyme leaves or chopped parsley

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil.
  2. Peel and cube the sweet potatoes into 1-inch cubes, aiming for uniform size (about 6 cups).
  3. In a small saucepan over medium heat, melt the butter. Swirl occasionally until it foams, then the foam subsides and brown specks appear (3-4 minutes). Remove from heat immediately when golden brown and nutty.
  4. In a large mixing bowl, whisk together the browned butter, maple syrup, salt, cinnamon, and black pepper until smooth.
  5. Add the cubed sweet potatoes to the bowl and toss well to coat evenly.
  6. Spread the sweet potatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  7. Roast for 25-30 minutes, flipping halfway through (at 15 minutes), until tender and caramelized.
  8. Let rest on the baking sheet for 2-3 minutes. Garnish with fresh thyme or parsley and a pinch of flaky sea salt if desired.

Notes

For dairy-free, use coconut oil or plant-based butter. For lower sugar, reduce maple syrup to 2 tablespoons. If using salted butter, reduce added salt to ¼ teaspoon. Cut cubes uniformly for even cooking. Watch brown butter closely to avoid burning. For crispier results, use a light-colored baking sheet.
