This easy no-bake Oreo icebox cake is a creamy, chocolatey dessert that requires only six ingredients and no oven. Perfect for hot days, it layers Oreo cookies with a light cream cheese filling for a crowd-pleasing treat that looks impressive but is simple to make.

Ingredients

Scale
  • 2 family-size packages Oreo cookies (about 3640 cookies)
  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened to room temperature
  • 3/4 cup hot fudge sauce (plus more for drizzling)

Instructions

  1. Whip the cream: In a large mixing bowl, beat the cold heavy whipping cream with an electric mixer on medium-high speed until soft peaks form (about 2-3 minutes). Add powdered sugar and vanilla extract, then continue beating until stiff peaks form. Set aside.
  2. Make the cream cheese base: In another large bowl, beat the softened cream cheese until smooth and creamy, about 1 minute.
  3. Combine the layers: Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until just combined.
  4. Prepare the pan: Line a 9×5-inch loaf pan or 8×8-inch square dish with plastic wrap, leaving some overhang on the sides.
  5. Start layering: Spread a thin layer (about 1/4 cup) of the cream mixture on the bottom of the pan. Arrange a single layer of Oreos on top, breaking cookies to fill gaps. Drizzle a thin layer of hot fudge sauce over the cookies if desired.
  6. Repeat the layers: Spread about 1/2 cup of the cream mixture over the cookies, smoothing evenly. Add another layer of Oreos, more fudge (optional), and more cream. Repeat until all cookies and cream are used, ending with a final layer of cream mixture on top (about 4 layers of cookies and 4 layers of cream).
  7. Chill: Cover the pan tightly with plastic wrap and refrigerate for at least 6-8 hours, preferably overnight.
  8. Serve: Use the plastic wrap overhang to lift the cake out of the pan. Place on a cutting board or serving platter. Slice into thick pieces with a sharp knife. Drizzle with more hot fudge sauce if desired.

Notes

For best texture, chill overnight (12-24 hours) to allow cookies to soften completely. Use full-fat cream cheese at room temperature to avoid lumps. Whip cream to stiff peaks for a stable filling. For clean slices, chill the cake in the freezer for 15-20 minutes before cutting.
