This easy one-bowl banana bread with chocolate chips is a quick and simple recipe that turns overripe bananas into a moist, tender loaf with pockets of melted chocolate. Perfect for weeknights, it requires just one bowl, a spoon, and no mixer.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, mashed
  • 1.5 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides, or spray generously with non-stick spray.
  2. In a large mixing bowl, melt the butter in the microwave in 20-second bursts, stirring between each. Let cool for a minute.
  3. Add the sugar and whisk into the melted butter. Crack in the eggs and add vanilla extract. Stir until combined and smooth.
  4. Peel the bananas and drop them into the bowl. Mash against the side with a spoon until mostly smooth with a few lumps. Stir into the wet mixture.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently just until the flour disappears; do not overmix.
  6. Fold in the chocolate chips with 3-4 gentle strokes.
  7. Scrape the batter into the prepared loaf pan and spread evenly. Smooth the top.
  8. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil at 40 minutes.
  9. Let cool in the pan for 10 minutes, then lift out using parchment overhang onto a cooling rack.
  10. Cool completely before slicing, at least 30 minutes to 1 hour.

Notes

For best results, use very ripe bananas with brown spots. Do not overmix the batter to avoid a tough texture. The bread tastes even better the next day as flavors deepen. Store wrapped at room temperature for up to 4 days or freeze for up to 3 months.
