Ingredients

Scale
  • 2 salmon fillets (about 6 oz each)
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1 bunch asparagus (about 12 oz), trimmed
  • 1 tablespoon olive oil
  • Pinch of salt
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (optional)
  • Red pepper flakes (optional)

Instructions

  1. Prep your ingredients: Take salmon out of fridge 10 minutes before cooking. Pat dry and season with salt, pepper, and garlic powder. Trim asparagus and toss with olive oil and salt. Mince garlic, chop parsley, and cut lemon.
  2. Sear the salmon: Heat a large skillet over medium-high heat. Add 1 tablespoon butter. Once melted and foaming, place salmon skin-side down. Cook undisturbed for 4-5 minutes until golden. Flip and cook 2-3 minutes for medium or 3-4 minutes for well-done (internal temp 145°F). Transfer to a plate and tent with foil.
  3. Cook the asparagus: Reduce heat to medium. Add remaining 1 tablespoon butter. Add asparagus in a single layer. Cook 2 minutes without moving, then toss and cook 2-3 minutes more until bright green with char marks.
  4. Make the garlic butter sauce: Push asparagus to one side. Add last tablespoon butter and minced garlic. Stir constantly for 30 seconds until fragrant. Remove from heat. Stir in lemon juice and any accumulated salmon juices.
  5. Bring it together: Return salmon to the pan, nestling among asparagus. Spoon garlic butter sauce over fillets. Sprinkle with parsley and red pepper flakes if using. Serve immediately.

Notes

Pat salmon dry for best sear. Don’t overcrowd the pan. Let salmon rest before serving. For dairy-free, substitute butter with ghee or olive oil. Adjust cooking time based on asparagus thickness.
