This easy oven-roasted pumpkin seeds with sea salt recipe is proof that simple doesn’t mean boring. With just three ingredients and about 30 minutes, you can transform something you’d normally toss in the trash into a snack that’s genuinely crave-worthy.

Ingredients

Scale
  • Fresh pumpkin seeds from one medium pumpkin (about 1 to 1.5 cups)
  • 1 to 2 tablespoons olive oil
  • 1 to 2 teaspoons sea salt
  • Optional: 1/2 teaspoon garlic powder
  • Optional: 1/2 teaspoon smoked paprika
  • Optional: 1/4 teaspoon cayenne pepper
  • Optional: 1 tablespoon sugar + 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Separate the seeds from the pumpkin guts. Place them in a colander or fine-mesh strainer.
  3. Rinse the seeds under cold water, using your fingers to gently rub them together until the water runs mostly clear.
  4. Dry the seeds thoroughly by spreading them on a clean kitchen towel or paper towels. Pat them dry and let them sit for 5 to 10 minutes.
  5. Toss the dried seeds in a mixing bowl with 1 to 2 tablespoons of olive oil and 1 to 2 teaspoons of sea salt until every seed is coated.
  6. Spread the seeds in a single layer on the prepared baking sheet, making sure no seeds are overlapping.
  7. Roast for 20 to 25 minutes, stirring halfway through at the 10-minute mark.
  8. Check for doneness: seeds are done when golden brown and you can hear them popping slightly. They will continue to crisp as they cool.
  9. Cool completely on a plate or cooling rack for at least 15 minutes before storing.

Notes

Dry the seeds thoroughly to avoid steaming. Do not overcrowd the pan; use two baking sheets if needed. Stir halfway through for even browning. Let seeds cool completely before storing to maintain crunch. Ovens vary, so start checking at 18 minutes. For best texture, use flaky sea salt like Maldon.
