A simple, festive dessert perfect for 4th of July celebrations featuring fresh strawberries, tender shortcake cubes, and luscious homemade whipped cream served on skewers.

  • 2 cups fresh strawberries, hulled and halved or quartered
  • 1 small shortcake or pound cake, cut into 1-inch cubes
  • 1 cup cold heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 8 to 10 inch wooden skewers, soaked in water for 10 minutes

Instructions

  1. Rinse and gently dry about 2 cups of fresh strawberries. Hull and cut them into halves or quarters depending on size.
  2. Cut your shortcake or pound cake into 1-inch cubes using a sharp knife.
  3. Chill your mixing bowl and beaters in the fridge for 10 minutes if possible.
  4. Pour 1 cup of cold heavy cream into the bowl, add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Beat on medium-high speed until soft peaks form (about 3-4 minutes).
  5. Thread onto each skewer alternating shortcake cubes and strawberries, starting with a cake cube then a strawberry, repeating until the skewer is full but leaving some space at the end for handling. Each skewer should hold about 4-5 pieces total.
  6. Place the skewers on a serving platter and add a generous dollop of the fresh whipped cream on the side or pipe it over the top just before serving.

Notes

Chill the mixing bowl and beaters before whipping cream for best results. Avoid overwhipping to prevent butter formation. Assemble skewers just before serving to prevent sogginess. For a dairy-free option, use chilled coconut cream and reduce sugar. Gluten-free shortcake or almond flour cakes can be used for gluten-sensitive diets. Optional macerate strawberries with sugar and lemon juice for 15 minutes for extra flavor.
