This moist and tender persimmon walnut cinnamon bread is a family favorite that even persimmon skeptics will love. Made with ripe Fuyu persimmons, warm cinnamon, and crunchy walnuts, it’s a quick and easy bread perfect for breakfast, brunch, or a cozy snack.

Ingredients

Scale
  • 2 large or 3 medium ripe Fuyu persimmons (about 1 cup mashed)
  • 1 ¾ cups (220 g) all-purpose flour
  • ¾ cup (150 g) granulated sugar
  • ⅓ cup (75 g) unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (60 g) chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease exposed ends.
  2. Wash persimmons, cut off tops, and chop into chunks. Mash with a fork or potato masher until chunky puree forms (about 1 cup).
  3. In a medium bowl, whisk together flour, cinnamon, nutmeg, baking soda, and salt.
  4. In a large bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla and mashed persimmon.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Fold in chopped walnuts.
  7. Pour batter into prepared pan and spread evenly. Tap pan gently on counter to release air bubbles.
  8. Bake for 50-60 minutes, until golden brown and a toothpick inserted in center comes out clean or with a few moist crumbs. Tent with foil if browning too quickly.
  9. Cool in pan for 10 minutes, then lift out using parchment sling and transfer to a wire rack. Cool completely before slicing (about 1 hour).

Notes

For best results, use very ripe Fuyu persimmons. Toast walnuts in a dry skillet for 2-3 minutes before adding for extra flavor. Do not overmix batter. Bread can be frozen for up to 3 months.
