Ingredients

Scale
  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans
  • ½ cup packed brown sugar
  • 1 teaspoon cinnamon
  • ¾ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F. Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, pumpkin pie spice, and salt. Whisk until smooth and uniform.
  3. Pour the pumpkin mixture into the prepared dish and spread evenly. Tap the dish gently on the counter to release air bubbles.
  4. In a small bowl, combine yellow cake mix, chopped pecans, brown sugar, and cinnamon. Stir with a fork to break up clumps. Pour melted butter over the top and stir until the mixture looks like wet sand with some pebbly bits.
  5. Sprinkle the crumble evenly over the pumpkin layer using your fingers, from a height of about 6 inches.
  6. Bake for 45-50 minutes, until the top is golden brown and the filling is set but still slightly jiggly in the center. If the top browns too fast, tent loosely with foil for the last 10 minutes.
  7. Cool on a wire rack for at least 20 minutes before serving. Serve warm or at room temperature.

Notes

Toast pecans at 350°F for 5-7 minutes for deeper flavor. Do not overmix the crumble; leave some clumps for texture. Let the cake cool at least 20 minutes before serving to allow the layers to set. This cake tastes even better the next day.
