These Easy Red Velvet Crinkle Cookies are soft, fudgy, and have a signature crackled top. Made with a boxed cake mix and simple pantry staples, they come together in under 30 minutes and are perfect for bake sales, holidays, or any day you need a little joy.

Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the red velvet cake mix and the extra tablespoon of cocoa powder to break up lumps.
  3. Make a well in the center of the dry mix. Add the eggs, vegetable oil, vinegar, and vanilla extract. Stir together with a wooden spoon or spatula until a soft, cohesive dough forms. Do not overmix; about 20-30 strokes should do it.
  4. If the dough feels too sticky, cover the bowl and chill in the fridge for 10-15 minutes.
  5. Pour the 1/2 cup of powdered sugar into a small bowl. Sift if lumpy.
  6. Scoop out rounded tablespoons of dough and roll into smooth balls about 1.5 inches in diameter. Roll each ball in the powdered sugar until completely coated.
  7. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake one sheet at a time in the center of the oven for 10-12 minutes. The cookies are done when the edges are set and the tops are cracked but the centers still look slightly soft.
  9. Let the cookies rest on the baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.
  10. Repeat with remaining dough, letting baking sheets cool between batches.

Notes

For best results, chill the dough if it’s sticky. Roll generously in powdered sugar for beautiful cracks. Bake time may vary; start checking at 9 minutes. Let cookies rest on the pan for 2-3 minutes before moving. Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
