Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced into ¼-inch thick pieces (mix of Granny Smith and Honeycrisp recommended)
  • ¼ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • ½ cup store-bought caramel sauce (e.g., Ghirardelli or Stonewall Kitchen)
  • ½ teaspoon flaky sea salt
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar (light or dark)
  • ½ cup unsalted butter, cold and cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Extra caramel sauce for drizzling (optional)
  • Extra flaky sea salt for sprinkling (optional)
  • Vanilla ice cream for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces. Place in a large bowl.
  3. Make the filling mixture: Add granulated sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice to the apples. Toss until every slice is coated.
  4. Add the caramel: Pour ½ cup caramel sauce over the apples and sprinkle with ½ teaspoon flaky sea salt. Stir gently until distributed. Set aside.
  5. Make the oat crumble topping: In a medium bowl, combine rolled oats, ¾ cup flour, brown sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Stir with a fork to break up lumps.
  6. Cut in the butter: Add cold butter cubes to the oat mixture. Use a pastry cutter, fork, or fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces visible. Do not overwork.
  7. Assemble the crisp: Pour apple filling into a greased 8×8-inch baking dish and spread evenly. Sprinkle oat crumble evenly over the top without pressing down.
  8. Bake: Place dish on a baking sheet to catch drips. Bake for 35-40 minutes, until filling is bubbly around edges and topping is golden brown. If topping browns too fast, tent loosely with foil for the last 10 minutes.
  9. Cool and serve: Let crisp cool on a wire rack for at least 10 minutes. Drizzle with extra caramel sauce and sprinkle with flaky sea salt. Serve warm with vanilla ice cream.

Notes

Don’t skip the lemon juice—it prevents browning and balances sweetness. Cold butter is essential for a crispy crumble. Let the crisp rest for at least 10 minutes before serving to allow the filling to set. For best results, use a mix of Granny Smith and Honeycrisp apples. Store-bought caramel sauce works better than homemade because it’s thinner and spreads evenly.
