This easy slow cooker cinnamon roll casserole for Christmas morning is a game-changing holiday breakfast that saves your oven and your sanity. With just 10 minutes of prep, you can set it and forget it, waking up to a warm, gooey, cinnamon-scented casserole that tastes like bread pudding meets cinnamon roll.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing (e.g., Pillsbury Grands!)
  • 4 large eggs, at room temperature
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup unsalted butter, melted
  • Reserved icing packets from the cinnamon rolls

Instructions

  1. Grease your slow cooker insert generously with non-stick cooking spray or softened butter.
  2. Open both cans of cinnamon rolls. Set the icing packets aside. Unroll each cinnamon roll and cut it into quarters using kitchen shears or a sharp knife.
  3. Arrange the quartered rolls in the slow cooker, spreading them out evenly in a single layer (a little overlapping is fine).
  4. In a large mixing bowl, whisk together the eggs, heavy cream, granulated sugar, vanilla extract, cinnamon, and nutmeg (if using) until the sugar is mostly dissolved and the mixture is smooth and pale yellow.
  5. Pour the custard over the cinnamon roll pieces, using a rubber spatula to gently toss and coat every piece evenly.
  6. Drizzle the melted butter evenly over the top.
  7. Cover and cook on LOW for 2.5 to 3 hours, until the center is set and no longer jiggly, and the edges are golden brown. A knife inserted in the center should come out clean or with a few moist crumbs.
  8. Let the casserole rest for 10 minutes to allow the custard to set.
  9. Drizzle the reserved icing packets generously over the warm casserole.
  10. Serve warm, scooping portions with a large spoon.

Notes

Don’t overcook; start checking at 2 hours. Use a slow cooker liner for easy cleanup. For firmer rolls, toast quartered pieces in a 350°F oven for 5 minutes before adding to the slow cooker. Let the casserole rest for 10 minutes before serving to allow the custard to set.
