Ingredients

Scale
  • 1 cup (226g) unsalted butter, melted
  • 1/4 cup (60ml) vegetable oil
  • 1 1/2 cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder (Dutch-process recommended)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (60g) powdered sugar, for rolling (plus extra for coating)
  • 1 cup (120g) powdered sugar (for icing)
  • 2 to 3 tablespoons milk
  • 1/2 teaspoon vanilla extract (optional, for icing)

Instructions

  1. Melt the butter and mix the wet ingredients: In a large bowl, melt 1 cup unsalted butter in the microwave in 30-second bursts. Let cool for 5 minutes. Whisk in vegetable oil, then granulated sugar until combined. Add eggs one at a time, whisking well after each, then stir in vanilla extract until smooth and glossy.
  2. Combine the dry ingredients: In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt until no lumps remain.
  3. Mix the dough: Gradually add dry ingredients to wet mixture, stirring with a spatula until just combined. Do not overmix. Cover bowl with plastic wrap and refrigerate for at least 2 hours, or up to 48 hours.
  4. Preheat and prep: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. Place powdered sugar for rolling in a shallow bowl.
  5. Shape and coat the cookies: Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and roll into balls. Roll each ball in powdered sugar until completely coated (double-coat for best results). Place on prepared baking sheets, spacing 2 inches apart.
  6. Bake: Bake for 10 to 12 minutes. Cookies should look puffed, cracked, and set around edges but still soft in center. Do not overbake.
  7. Cool completely: Let cookies rest on baking sheet for 5 minutes, then transfer to a cooling rack. Cool completely before adding icing.
  8. Make the spider web icing: In a small bowl, whisk together 1 cup powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth. Add more milk a teaspoon at a time if needed. Transfer to a small piping bag or zip-top bag with a tiny corner snipped off.
  9. Pipe the spider webs: Pipe a small circle of icing in the center of each cookie. Pipe a spiral from center outward. While icing is still wet, use a toothpick to drag lines from center outward through the spiral, creating a web effect. Wipe toothpick clean between cookies.
  10. Let the icing set: Allow cookies to sit at room temperature for about 30 minutes until icing firms up.

Notes

Chill dough thoroughly for at least 2 hours to prevent spreading. Roll dough balls generously in powdered sugar for best crackle effect. Watch baking time carefully to avoid overbaking. Use a light hand when dragging toothpick through icing. Pipe spider webs on a few cookies at a time to prevent icing from setting before dragging.
