These easy turkey and cheddar roll-ups are a quick, no-cook lunch that comes together in just five minutes. With a light rolling technique and simple ingredients, they hold together beautifully for a satisfying meal.

  • 4 (8-inch) flour tortillas (soft taco size)
  • 1 pound deli turkey breast (sliced, about 46 ounces per wrap)
  • 8 slices cheddar cheese (sharp or mild)
  • 8 tablespoons cream cheese (about 2 tablespoons per wrap), softened
  • 1 cup fresh spinach or romaine lettuce (optional), patted dry
  • Salt and pepper to taste

Instructions

  1. Lay out a tortilla on a clean, flat surface. If stiff, microwave for 10 seconds to soften.
  2. Spread a thin, even layer of cream cheese (about 2 tablespoons) over the entire surface of the tortilla, going all the way to the edges.
  3. Layer 4-6 slices of turkey evenly over the cream cheese, overlapping slightly to cover the tortilla.
  4. Place 2 slices of cheddar cheese on top of the turkey, slightly overlapping.
  5. Add a small handful of optional greens along the center line of the tortilla.
  6. Season with a tiny pinch of salt and pepper.
  7. Roll the tortilla tightly, starting from the bottom edge. Tuck the edge firmly over the filling, then roll forward with gentle, even pressure. Do not squeeze.
  8. Place the roll seam side down on the cutting board and let rest for 30-60 seconds.
  9. Using a sharp knife or pizza cutter, slice the roll into 1-inch pinwheels.
  10. Arrange on a plate or pack in a lunchbox. Serve immediately or refrigerate.

Notes

For best results, use room temperature cream cheese to avoid tearing the tortilla. Do not overstuff; less is more for a clean roll. If making ahead, keep rolls whole and unsliced in the refrigerator for up to 4 days. Slice just before serving to prevent drying out. For a warm wrap, heat the whole roll in a dry skillet for 30 seconds per side before slicing.
