Quick, affordable, and crowd-pleasing beef tacos with a tangy lime crema that come together in under 25 minutes. Perfect for busy weeknights, this recipe uses simple pantry ingredients and delivers bold, balanced flavor that even picky eaters love.

Ingredients

Scale
  • 1 pound ground beef (80/20 works best for flavor, but 93/7 works too—just add a splash of oil)
  • 1 tablespoon olive oil (only if using lean beef)
  • 1 small yellow onion, finely diced (about 1/2 cup)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder in a pinch)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth (or water, but broth adds more depth)
  • 1 tablespoon tomato paste (optional, but I love the richness it adds)
  • 1/2 cup sour cream (full-fat is best, but light works)
  • 2 tablespoons fresh lime juice (about 1 lime—please don’t use bottled)
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt
  • 1 small garlic clove, minced (optional, for a savory kick)
  • 8–10 small flour or corn tortillas (warmed)
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 large tomato, diced
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped (optional, but highly recommended)
  • Lime wedges, for squeezing

Instructions

  1. Make the lime crema first. In a small bowl, whisk together the sour cream, lime juice, lime zest, salt, and minced garlic if using. Set aside. This gives the flavors time to meld while you cook. It should be thick but pourable—if it’s too thick, add a teaspoon of water.
  2. Heat your skillet over medium-high heat. Add the olive oil if you’re using lean beef. Let it get shimmering hot—about 30 seconds.
  3. Add the diced onion and cook for 2-3 minutes, until it starts to soften and turn translucent. You should hear a gentle sizzle. If it’s silent, your pan isn’t hot enough.
  4. Add the ground beef to the skillet. Break it up with your wooden spoon into small crumbles. Let it cook undisturbed for 2 minutes—this gives you nice browning. Then start stirring and breaking it up further.
  5. Cook the beef for 5-6 minutes total, until no longer pink. If there’s excess fat, spoon most of it out, leaving about 1 tablespoon for flavor.
  6. Add the garlic and cook for 30 seconds, until fragrant. Don’t skip this—raw garlic is harsh, but cooked garlic is magic.
  7. Sprinkle the chili powder, cumin, smoked paprika, salt, and pepper over the beef. Stir well to coat every piece. Cook for 1 minute to toast the spices—you’ll smell them bloom.
  8. Stir in the tomato paste if using, and cook for 1 more minute. This deepens the flavor and adds a slight sweetness.
  9. Pour in the beef broth and bring to a simmer. Let it cook for 2-3 minutes, stirring occasionally, until most of the liquid has evaporated. You want the beef to be moist but not soupy. It should look glossy and rich.
  10. While the beef simmers, warm your tortillas. You can do this in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 30 seconds. I prefer the skillet method—it gives them slight char marks and makes them more pliable.
  11. Assemble your tacos. Spoon about 2-3 tablespoons of beef into each tortilla. Top with lettuce, tomato, cheese, and a generous drizzle of lime crema. Sprinkle with cilantro if using, and serve with lime wedges on the side.

Notes

For best results, don’t overcrowd the pan when browning the beef—cook in batches if doubling. Toast the spices in the hot fat for 1 minute to release their essential oils. Warm tortillas properly to prevent cracking. The beef tastes even better the next day as flavors meld. Store beef in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Make lime crema fresh; it keeps for 3 days in the fridge.
