This Festive Spiced Pomegranate Mule Mocktail is a quick, easy, and crowd-pleasing non-alcoholic drink that combines tart pomegranate, spicy ginger beer, and warm cinnamon for a perfect holiday party beverage.

Ingredients

Scale
  • 2 cups (480 ml) pomegranate juice
  • 3 cups (720 ml) ginger beer
  • 1/2 cup (120 ml) fresh lime juice (about 4–5 limes)
  • 1/4 cup (60 ml) honey
  • 2 whole cinnamon sticks
  • 4–5 whole cloves
  • Ice (large cubes preferred)
  • Fresh pomegranate arils for garnish
  • Lime wheels for garnish
  • Fresh rosemary sprigs for garnish

Instructions

  1. Prepare the Honey Spice Base: In a small bowl, combine 1/4 cup (60 ml) of warm water with 1/4 cup (60 ml) of honey. Stir until the honey is completely dissolved. Add the 2 cinnamon sticks and 4-5 whole cloves. Let this sit for 5 minutes while you prep the other ingredients.
  2. Juice the Limes: Roll 4-5 limes firmly on the counter under your palm for about 10 seconds each. Cut them in half crosswise and juice them until you have 1/2 cup (120 ml). Strain the juice through a fine-mesh sieve if desired.
  3. Combine in the Pitcher: Pour the honey-spice mixture (including the cinnamon sticks and cloves) into your pitcher. Add the 2 cups (480 ml) of pomegranate juice and the 1/2 cup (120 ml) of fresh lime juice. Stir gently with a wooden spoon to combine.
  4. Add the Ginger Beer: Just before serving, slowly pour in the 3 cups (720 ml) of ginger beer. Stir very gently to keep as much carbonation as possible.
  5. Fill with Ice: Add lots of ice to the pitcher (about 4 cups of large ice cubes).
  6. Garnish and Serve: Drop in a handful of fresh pomegranate arils (about 1/4 cup), a few lime wheels, and 2-3 sprigs of fresh rosemary. Pour into ice-filled glasses and garnish each glass with an extra lime wheel and a small rosemary sprig.
  7. Taste and Adjust: Before serving, taste your mocktail. If it needs more sweetness, stir in a little extra honey dissolved in warm water. If it needs more tartness, add a squeeze of fresh lime. If it needs more spice, let the cinnamon and cloves sit in the pitcher a bit longer before serving.

Notes

Dissolve honey in warm water first to prevent it from sinking to the bottom. Keep ginger beer cold and add it just before serving to maintain fizz. For a stronger spice kick, add a thin slice of fresh ginger to the honey mixture while it steeps. The base (without ginger beer) can be made up to 24 hours in advance.
