  • 4 to 6 bone-in, skin-on chicken thighs
  • 2 medium ripe but firm fresh peaches
  • 1/4 cup light brown sugar
  • 1 to 1 1/2 teaspoons chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher or sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and trim excess fat if needed.
  2. In a medium bowl, whisk together brown sugar, chipotle chili powder, garlic powder, smoked paprika, salt, black pepper, olive oil, and lime juice.
  3. Toss the chicken thighs in the marinade, ensuring each piece is well coated. Marinate for at least 20 minutes at room temperature or up to 2 hours in the fridge.
  4. Slice peaches in half and remove pits. Brush cut sides lightly with olive oil.
  5. Preheat grill to medium-high heat (around 400°F). Clean and oil the grates.
  6. Place chicken thighs skin-side down on the grill. Cook for 6-8 minutes per side, flipping once, until internal temperature reaches 165°F (74°C).
  7. During the last 3-4 minutes of cooking, place peach halves cut-side down on the grill until grill marks appear and peaches are tender but firm.
  8. Remove chicken and peaches from grill and let chicken rest for 5 minutes. Slice peaches if desired and garnish with fresh cilantro.

Notes

Marinate chicken at room temperature for at least 20 minutes for best flavor penetration. Use bone-in, skin-on thighs for juiciness and caramelization. Keep grill lid closed as much as possible. Watch peaches closely to avoid mushiness. Rest chicken after grilling to retain juices. Use tongs to flip chicken to keep juices locked in. If no grill is available, a grill pan or broiler can be used but will lack smoky flavor.
