Flavorful Peach and Prosciutto Flatbread

A simple and delicious flatbread featuring juicy peaches, salty prosciutto, fresh arugula, and a subtle honey drizzle for a perfect balance of sweet and savory flavors.

Ingredients

  • 1 store-bought thin flatbread or naan (810 inches in diameter)
  • 2 medium ripe peaches, thinly sliced
  • 4 ounces thinly sliced prosciutto
  • 2 cups fresh arugula leaves, washed and dried
  • 2 tablespoons good-quality honey
  • 4 ounces fresh mozzarella, torn into small pieces (optional)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven while it preheats for at least 30 minutes.
  2. Lightly brush both sides of the flatbread with 1 tablespoon of extra virgin olive oil. Place the flatbread on a parchment-lined baking sheet or directly on the hot pizza stone.
  3. Tear 4 ounces of fresh mozzarella into small pieces and scatter evenly over the flatbread (optional).
  4. Arrange the thin peach slices evenly on top of the cheese, avoiding overcrowding.
  5. Tear or slice the prosciutto into bite-sized pieces and distribute over the peaches.
  6. Bake the flatbread for 10-12 minutes, or until the crust edges turn golden and crisp and the cheese is melted and bubbly.
  7. While baking, toss the arugula with lemon juice, salt, and black pepper.
  8. Remove the flatbread from the oven and let it cool for about 2 minutes.
  9. Pile the dressed arugula evenly on top of the flatbread.
  10. Drizzle 2 tablespoons of honey lightly over the entire flatbread.
  11. Slice into 6-8 pieces and serve immediately.

Notes

Use a pizza stone or preheated baking sheet for a crispier crust. Add arugula after baking to keep its peppery flavor. Drizzle honey sparingly to avoid overpowering the saltiness of prosciutto. For juicy peaches, drain excess juice or sprinkle cornstarch to reduce moisture. Gluten-free flatbread or cauliflower crust can be used as substitutes. Variations include swapping mozzarella for burrata or goat cheese, or adding herbs like thyme or basil.
