Ingredients

Scale
  • 2 racks (3 to 4 pounds total) baby back ribs, trimmed of excess fat and membrane removed
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon cayenne pepper (optional)
  • ½ cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon soy sauce or tamari (optional)
  • Pinch of chili flakes (optional)
  • Wood chips or chunks (hickory or apple wood recommended)
  • Aluminum foil

Instructions

  1. Remove the silver skin membrane from the bone side of each rack using a paper towel to grip and pull it off in one piece. (10 minutes)
  2. In a bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Stir well to blend evenly. (5 minutes)
  3. Pat ribs dry with paper towels. Generously sprinkle the dry rub all over both sides of the ribs, pressing it into the meat. Wrap ribs in plastic wrap or place in a covered dish and refrigerate for at least 1 hour, preferably overnight. (5 minutes prep + resting time)
  4. Preheat smoker or grill to 225°F (107°C). Add hickory or apple wood chips/chunks to the smoker box or directly on coals. Maintain temperature throughout the cook. (15 minutes)
  5. Place ribs bone side down on smoker grate. Smoke uncovered for about 3 hours, maintaining steady 225°F (107°C). Avoid opening lid frequently. (3 hours)
  6. Remove ribs and wrap each rack tightly in aluminum foil. Optionally add 1 tablespoon apple juice inside foil for moisture. Return to smoker and cook for an additional 1.5 hours to steam ribs tender. (1.5 hours)
  7. While ribs are wrapped, combine honey, apple cider vinegar, Dijon mustard, soy sauce, and chili flakes in a small saucepan. Warm gently on low heat, stirring until combined. Do not boil. (5-7 minutes)
  8. Carefully unwrap ribs and brush honey glaze generously on both sides. Place back on smoker or grill for 30-45 minutes unwrapped to allow glaze to caramelize and set. Watch closely to avoid burning. (30-45 minutes)
  9. Remove ribs from heat and let rest for 10 minutes before slicing between bones to redistribute juices. (10 minutes)

Notes

Maintain a steady smoker temperature of 225°F (107°C) throughout cooking. Use the foil wrap step (Texas crutch) to lock in moisture and speed tenderness. Remove the membrane for better smoke absorption and texture. Brush honey glaze multiple times in the last 30-45 minutes for a shiny, caramelized finish. Use a meat thermometer to check for 190°F (88°C) internal temperature for tender ribs. Spritz ribs with apple juice if they appear dry during smoking. For gluten-free, substitute soy sauce with coconut aminos or gluten-free tamari. Variations include adding cinnamon to the rub for warmth or using different wood chips for flavor.
