  • 2 tbsp coarse kosher salt
  • 2 tbsp freshly ground black pepper
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Hickory or oak wood chips
  • 1 large red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2 tbsp granulated sugar
  • 1 tbsp kosher salt
  • 1 tsp black peppercorns
  • 1 bay leaf
  • 2 tbsp prepared horseradish
  • 1/2 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 12 small slider buns, lightly toasted
  • Fresh arugula or baby spinach (optional)

Instructions

  1. Trim excess fat from the brisket, leaving a thin layer for moisture.
  2. Mix kosher salt, black pepper, smoked paprika, garlic powder, and onion powder in a bowl.
  3. Rub the seasoning blend evenly over the entire brisket surface and let rest at room temperature for 30 minutes.
  4. Preheat smoker or grill for indirect cooking at 225°F (107°C). Add hickory or oak wood chips for smoke.
  5. Place brisket fat-side up on smoker rack and smoke until internal temperature reaches 195°F (90°C), about 8-10 hours.
  6. Wrap brisket in butcher paper or foil, then in a towel, and let rest in a cooler or warm place for at least 1 hour.
  7. While brisket smokes, prepare pickled red onions: combine apple cider vinegar, water, sugar, salt, peppercorns, and bay leaf in a saucepan and bring to a boil.
  8. Pour hot brine over sliced red onions in a jar and let sit at room temperature for at least 30 minutes or refrigerate overnight.
  9. Mix horseradish sauce by combining mayonnaise, prepared horseradish, lemon juice, salt, and pepper in a bowl. Chill until serving.
  10. Slice brisket thinly against the grain into 1/8 to 1/4 inch slices.
  11. Lightly toast slider buns in a skillet or toaster.
  12. Assemble sliders by spreading horseradish sauce on bottom bun, layering brisket slices, pickled red onion rings, and fresh arugula if using. Top with slider bun and press lightly.

Notes

If you don’t have a smoker, use a charcoal grill set up for indirect cooking or a covered roasting pan with soaked wood chips in an oven. Resting the brisket for at least 1 hour is crucial for tenderness. Adjust horseradish sauce heat to preference. Pickled onions taste better after a few hours or overnight in the fridge. For gluten-free, use gluten-free buns or lettuce wraps.
