Ingredients

Scale
  • 1 box chocolate cake mix (plus ingredients listed on the box, usually eggs, oil, and water)
  • 1 cup chocolate chips (optional)
  • 1 cup vanilla frosting (store-bought or homemade vanilla buttercream)
  • 1/2 cup (1 stick) unsalted butter, browned
  • 2 cups powdered sugar, sifted
  • 1/4 cup unsweetened cocoa powder
  • 23 tablespoons whole milk or heavy cream
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • White candy melts or white chocolate for football laces (melted)
  • Wooden cake pop sticks
  • Optional: sprinkles or edible glitter for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Prepare chocolate cake mix according to package instructions. Pour batter into greased 9×13 inch baking pan and bake 30-35 minutes or until toothpick comes out clean. Cool completely on wire rack (about 1 hour).
  2. Crumble cooled cake into a large bowl, breaking down into fine crumbs. Fold in chocolate chips if using.
  3. Add 1 cup vanilla frosting to crumbled cake and mix until mixture holds together when pressed. Add more frosting by tablespoon if mixture is dry.
  4. Shape about 2 tablespoons of cake mixture into an oval football shape. Place on parchment-lined baking sheet and refrigerate for 1 hour to firm up.
  5. Brown the butter in a light-colored skillet over medium heat, stirring frequently until golden brown and nutty aroma appears (about 5 minutes). Remove from heat and cool slightly.
  6. In a mixing bowl, combine browned butter, powdered sugar, cocoa powder, vanilla extract, salt, and 2 tablespoons milk or cream. Beat until smooth and creamy, adding more milk if needed for spreading consistency.
  7. Dip tip of each cake pop stick into melted chocolate or candy melts, then insert halfway into each cake ball to secure.
  8. Dip each cake pop into brown butter chocolate frosting, coating evenly. Tap off excess and stand upright on foam block to dry.
  9. Melt white chocolate or candy melts and pipe football laces across center of each cake pop. Let frosting set completely (about 30 minutes).

Notes

Watch butter closely when browning to avoid burning. Chill shaped cake balls to help them hold on sticks. Dip stick tips in melted chocolate before inserting to secure. Use spoon to coat cake pops evenly. Let frosting set completely before serving. Store in airtight container in fridge up to 5 days or freeze up to 2 months.
