  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 can (15 oz / 425 g) corn kernels, drained (fresh or frozen corn works too)
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/2 cup (75 g) red onion, finely diced
  • 1/2 cup (75 g) green bell pepper, diced
  • 1/4 cup (15 g) fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 1 lime (about 2 tbsp / 30 ml), fresh squeeze
  • Salt and pepper, to taste
  • 1 ripe avocado, peeled and pitted
  • 1 ripe mango, peeled and diced (firm but sweet works best)
  • 1/4 cup (60 ml) Greek yogurt or sour cream (use coconut yogurt for dairy-free)
  • 1 tbsp (15 ml) fresh lime juice
  • 1/2 tsp ground cumin
  • Salt to taste

Instructions

  1. Rinse and drain the black beans and corn thoroughly to avoid excess moisture.
  2. Halve the cherry tomatoes, dice the red onion and green bell pepper finely, chop the cilantro, and mince the jalapeño if using.
  3. Combine all the cowboy caviar ingredients in a large mixing bowl.
  4. Squeeze the juice of one lime over the mixture, add salt and pepper to taste, and stir gently to combine.
  5. In a food processor or blender, combine the ripe avocado, diced mango, Greek yogurt (or substitute), lime juice, ground cumin, and a pinch of salt. Blend until smooth and creamy. Add a teaspoon of water or more lime juice if needed to loosen the dip.
  6. Either fold about half of the creamy avocado mango dip into the cowboy caviar mixture for a loaded version or serve the dip on the side for dipping.
  7. Taste and adjust salt, pepper, or lime juice as needed to balance flavors.
  8. Optional: Chill the cowboy caviar in the fridge for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.

Notes

Use ripe but firm mango and avocado for best texture. Drain beans and corn well to avoid watery caviar. Lime juice brightens the dish and helps prevent avocado browning. Make ahead by keeping dip and caviar separate. Adjust jalapeño for desired heat. For vegan/dairy-free, substitute Greek yogurt with coconut yogurt or silken tofu.
