A quick and easy gourmet snack featuring cherry tomatoes, fresh mozzarella, basil, and savory salami on bite-sized skewers. Perfect for last-minute cravings or entertaining guests.

  • 1 pint cherry tomatoes (about 250g)
  • 8 oz fresh mozzarella balls (bocconcini)
  • 8 oz salami slices (Genoa or Soppressata recommended)
  • 16 fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • Balsamic glaze (optional, for drizzling)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse cherry tomatoes and fresh basil leaves under cold water and pat dry.
  2. Slice salami into halves or thirds if slices are large. Drain mozzarella balls if packed in water.
  3. Optionally, toss cherry tomatoes with 1 tablespoon of extra virgin olive oil, a pinch of salt, and freshly ground black pepper.
  4. Thread one cherry tomato onto a skewer or toothpick, followed by a folded basil leaf, a mozzarella ball, and a folded piece of salami. Repeat until all ingredients are used.
  5. Arrange skewers on a serving platter. Drizzle with remaining olive oil and balsamic glaze if desired. Sprinkle with cracked black pepper.
  6. Serve immediately or cover and refrigerate for up to 2 hours. Add olive oil and balsamic glaze just before serving if chilled.

Notes

If mozzarella balls are large, slice them in half to keep skewers bite-sized. Fold salami pieces compactly and twist gently when threading to secure. Dry tomatoes and basil well to avoid sogginess. Assemble skewers just before serving to keep basil fresh. Drizzle olive oil and balsamic glaze last to enhance flavor.
