A light and indulgent summer salad combining juicy peaches, creamy burrata, salty prosciutto, and aromatic basil oil. Perfect for quick, fuss-free entertaining.

  • 34 ripe, firm peaches, sliced
  • 8 ounces burrata cheese
  • 4 ounces thinly sliced prosciutto
  • 1 cup packed fresh basil leaves, washed and dried
  • 1/2 cup extra virgin olive oil
  • 1 clove garlic, smashed
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: splash of fresh lemon juice or white balsamic vinegar

Instructions

  1. Prepare the basil oil: In a small saucepan over low heat, combine 1/2 cup extra virgin olive oil, 1 cup packed fresh basil leaves, and 1 smashed garlic clove. Warm gently for about 5 minutes without boiling. Remove from heat and let cool completely. Strain if bitterness occurs.
  2. Slice the peaches: Wash and dry peaches. Remove pits and slice each peach into 8 thin wedges, handling gently if peaches are soft.
  3. Prep the prosciutto: Tear large slices into bite-sized pieces or leave whole. Lay on paper towels to absorb excess moisture if needed.
  4. Arrange the salad: Spread peach slices in a single layer on a large shallow plate or platter. Tear burrata into chunks and scatter on top. Layer prosciutto evenly over the salad.
  5. Drizzle with basil oil: Spoon the cooled basil oil generously over the salad. Season with sea salt and freshly ground black pepper to taste.
  6. Optional finishing touch: Add a few drops of fresh lemon juice or white balsamic vinegar for brightness.
  7. Serve immediately to enjoy the contrast of creamy burrata, juicy peaches, and aromatic basil oil.

Notes

Warm the olive oil gently to avoid bitterness in basil oil. Bring burrata to room temperature before serving for creamier texture. Slice peaches just before assembling to prevent browning. Use flaky sea salt for best texture and flavor. Basil oil can be made a day ahead and stored refrigerated.
