  • 4 cups (600g) seedless watermelon, cut into 1-inch cubes
  • 1 cup (150g) feta cheese, crumbled or cut into 1-inch cubes
  • About 20 fresh mint leaves, washed and patted dry
  • 2 tablespoons honey (preferably raw or wildflower)
  • Juice of 1 medium lime (about 2 tablespoons)
  • Optional: pinch of flaky sea salt for sprinkling

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into 1-inch cubes using a sharp knife.
  2. Cube or crumble the feta cheese into roughly 1-inch pieces to match the watermelon.
  3. Rinse and gently dry about 20 fresh mint leaves, avoiding bruising.
  4. In a small bowl, whisk together 2 tablespoons honey and the juice of 1 medium lime until smooth. Warm honey briefly if thick.
  5. Assemble the skewers by threading a watermelon cube, a folded mint leaf, a feta cube, and another mint leaf, repeating until the skewer is full (usually 3 watermelon, 2 feta, and 4-5 mint leaves per skewer).
  6. Arrange skewers on a serving platter and lightly drizzle the honey lime mixture over the top. Optionally sprinkle flaky sea salt.
  7. Serve immediately or refrigerate up to 2 hours before serving. Add drizzle just before serving if prepared ahead.

Notes

Use firm but ripe watermelon for best texture. Warm honey slightly if too thick for easy mixing. Assemble skewers just before serving to prevent watermelon from becoming watery. Optional flaky sea salt enhances flavor. Can be grilled briefly for smoky flavor but watch feta melting.
