  • 1 large store-bought flatbread or naan (whole wheat or multigrain preferred)
  • 1 cup (8 oz) small-curd cottage cheese, well-drained
  • 2 tablespoons heavy cream or milk (dairy-free milk like oat milk can be used)
  • 1 pint (about 10.5 oz) cherry tomatoes, halved
  • 2 cloves garlic, finely minced
  • 2 tablespoons olive oil, divided (extra virgin recommended)
  • 1 teaspoon balsamic vinegar (optional)
  • A handful fresh basil, chopped (or substitute with fresh oregano or thyme)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it to prevent sticking.
  2. Place the halved cherry tomatoes on the baking sheet cut side up. Drizzle with 1 tablespoon olive oil, minced garlic, balsamic vinegar (if using), and a pinch of salt and pepper. Toss gently to coat.
  3. Roast the tomatoes for about 15-18 minutes until they start to caramelize and soften, watching carefully to avoid burning.
  4. While tomatoes roast, whip the cottage cheese with 2 tablespoons heavy cream or milk in a medium bowl using a hand mixer or blender until smooth and creamy, about 1-2 minutes.
  5. Season the whipped cottage cheese with salt, pepper, and half of the chopped fresh basil. Stir gently to combine.
  6. Place the flatbread on a separate baking sheet or pizza stone. Drizzle with the remaining 1 tablespoon olive oil and brush lightly to coat.
  7. Spread the whipped cottage cheese evenly over the flatbread.
  8. Top with the roasted cherry tomatoes and any juices left on the baking sheet. Scatter the remaining fresh basil over the top and sprinkle red pepper flakes if desired.
  9. Bake in the oven for 8-10 minutes until the flatbread edges are golden and crisp and the toppings are warmed through.
  10. Remove from oven, let cool for 2 minutes, then slice and serve warm. Optionally, drizzle with olive oil or garnish with fresh basil leaves.

Use well-drained cottage cheese to avoid soggy flatbread. Roasting the cherry tomatoes intensifies their sweetness and prevents excess moisture. If flatbread crisps too quickly, tent loosely with foil halfway through baking. For a softer crust, bake on a lower rack or reduce baking time slightly. Leftovers keep well refrigerated for up to 2 days; reheat in a 350°F oven for 5-7 minutes or in a skillet over medium heat.
