This fun candy eyeball popcorn is a quick and easy Halloween snack mix that combines salty, crunchy popcorn with sweet white chocolate and spooky candy eyeballs. Perfect for parties, movie nights, or trick-or-treaters, it’s a crowd-pleaser that comes together in minutes.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/3 cup unpopped kernels or one standard bag of plain microwave popcorn)
  • 1/4 cup unsalted butter, melted
  • 1/4 teaspoon salt (optional)
  • 12 ounces white chocolate melting wafers or white chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening (optional)
  • 1/2 cup candy eyeballs
  • 1/4 cup Halloween sprinkles (optional)
  • 1/4 cup mini pretzel twists, broken into pieces (optional)

Instructions

  1. Pop your popcorn using your preferred method. Spread the popped popcorn on a baking sheet in a single layer, removing any unpopped kernels. Let cool for about 5 minutes.
  2. Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring well after each, until smooth (about 90 seconds total). If using, stir in the coconut oil or shortening after the first 30 seconds.
  3. Drizzle the melted butter over the cooled popcorn and gently toss to coat every kernel.
  4. Drizzle the melted white chocolate over the buttered popcorn and gently fold with a spatula until evenly coated.
  5. While the white chocolate is still wet, sprinkle the candy eyeballs, Halloween sprinkles, and broken pretzel pieces over the popcorn. Gently toss to distribute evenly.
  6. Spread the coated popcorn back onto the parchment-lined baking sheet in a single layer, separating large clumps. Let set at room temperature for about 30 minutes, or until the chocolate is firm.
  7. Once set, break the popcorn into bite-sized clusters and serve.

Notes

For best results, use freshly popped popcorn. Do not skip the butter step as it helps the chocolate stick. Work quickly once the chocolate is melted. Store in an airtight container at room temperature for up to 5 days. To revive crunch, spread on a baking sheet and warm in a 300°F oven for 5 minutes, then cool completely.
