Game Day Warm Bacon and Beer Cheese Dip with Pretzels

  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, freshly shredded
  • 1 cup Gouda cheese, freshly shredded
  • 1/2 cup light beer (pilsner or lager)
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dry mustard powder
  • Salt and black pepper, to taste
  • 6 slices thick-cut bacon
  • 2 green onions, thinly sliced
  • 1/4 cup shredded sharp cheddar, for topping
  • 1 bag frozen soft pretzel bites (or homemade pretzels)
  • Optional: sliced apples, celery sticks, or crusty bread for dipping

Instructions

  1. Cook the bacon: Place bacon slices in a cold skillet. Turn heat to medium and cook for 6-8 minutes, flipping once, until crispy. Transfer to a paper towel-lined plate. Once cool, crumble or chop into small pieces. Set aside.
  2. Shred your cheeses: While the bacon cooks, shred the cheddar and Gouda.
  3. Start the base: In a medium saucepan over medium-low heat, add the softened cream cheese. Stir constantly with a wooden spoon until melted and smooth, about 2 minutes.
  4. Add the flour and spices: Sprinkle the flour, garlic powder, smoked paprika, and dry mustard over the melted cream cheese. Stir well for about 1 minute.
  5. Pour in the beer: Slowly pour in the beer while whisking continuously. Keep whisking for 2-3 minutes until it starts to thicken slightly.
  6. Add the shredded cheeses: Reduce heat to low. Add the shredded cheddar and Gouda in small handfuls, stirring constantly after each addition until fully melted. The dip should be thick and glossy.
  7. Season and finish: Taste and add salt and pepper as needed. Stir in half of the crumbled bacon and half of the sliced green onions.
  8. Top and serve: Transfer dip to a serving bowl. Top with remaining crumbled bacon, remaining green onions, and extra 1/4 cup shredded cheddar. Serve immediately with warm pretzel bites.

Notes

Shred your own cheese for best results. Use a light lager or pilsner; avoid hoppy beers. For gluten-free, use gluten-free beer and cornstarch slurry. For a lower-fat option, use reduced-fat cream cheese and skip the Gouda. Reheat leftovers gently in microwave or stovetop with a splash of milk or beer.
