A quick, wholesome breakfast featuring baked eggs with creamy feta, sautéed spinach, and roasted cherry tomatoes, perfect for busy mornings or lazy brunches.

  • 3 to 4 large eggs, preferably at room temperature
  • 4 ounces (115 grams) feta cheese, crumbled
  • 4 cups (120 grams) fresh spinach, loosely packed, washed and roughly chopped
  • 1 pint (about 300 grams) cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Red pepper flakes, optional, a pinch
  • Zest of half a lemon, optional
  • Fresh herbs (thyme or oregano), optional, a few sprigs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the halved cherry tomatoes with 1 tablespoon olive oil, a pinch of salt, and pepper. Spread them cut-side up on a baking sheet and roast for about 15 minutes until soft and caramelized.
  3. While tomatoes roast, heat the remaining tablespoon of olive oil in an oven-safe skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
  4. Add the spinach to the skillet and sauté, stirring frequently, until wilted and excess moisture evaporates, about 3 to 4 minutes. Season lightly with salt and pepper.
  5. Transfer the roasted tomatoes to the skillet with spinach. Crumble the feta cheese evenly over the top.
  6. Crack 3 to 4 eggs evenly over the mixture. For runny yolks, bake for 10 to 12 minutes; for firmer yolks, bake 14 to 16 minutes. Keep an eye on the whites to ensure they are set but not tough.
  7. Optional: Sprinkle red pepper flakes, lemon zest, and tuck in fresh herb sprigs before baking.
  8. Place the skillet in the oven and bake uncovered until eggs are set and feta softens.
  9. Remove from oven carefully and let rest for 1-2 minutes before serving.

Notes

Use room temperature eggs for even cooking. Rotate the pan halfway through baking if eggs cook unevenly. Tent skillet with foil if feta browns too quickly. Substitute kale or Swiss chard for spinach with longer sauté time. For dairy-free, use vegan feta or omit cheese and sprinkle nutritional yeast after baking.
