  • 1.5 lbs lean ground turkey (93/7 recommended)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 2 chipotle peppers in adobo sauce, minced, plus 1 tbsp adobo sauce
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp unsweetened cocoa powder
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper (or to taste)
  • Optional toppings: shredded cheddar, sour cream or Greek yogurt, sliced jalapeños, fresh cilantro, diced avocado, crushed tortilla chips, lime wedges

Instructions

  1. Brown the turkey: Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (about 6-8 minutes). Drain excess liquid if needed, then transfer to the slow cooker.
  2. Sauté the aromatics: In the same skillet, add a drizzle of olive oil if needed. Cook the diced onion for about 4 minutes until translucent. Add the minced garlic and cook for 30 seconds until fragrant. Scrape up any browned bits from the pan and transfer to the slow cooker.
  3. Add the tomatoes and beans: Pour in the fire-roasted diced tomatoes (with juices), tomato sauce, drained kidney beans, and drained black beans. Stir gently.
  4. Season the chili: Add the chipotle peppers, adobo sauce, chili powder, cumin, smoked paprika, oregano, cocoa powder, salt, and pepper. Pour in the chicken broth and stir until well combined.
  5. Slow cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours. About 30 minutes before serving, taste and adjust seasoning.
  6. Rest and serve: Let the chili sit on warm for 10 minutes before serving. Ladle into bowls and top with desired garnishes.

Notes

For best flavor, brown the turkey well and toast the spices. Chili tastes even better the next day. If too thick, add a splash of broth; if too thin, cook uncovered on high for 15-20 minutes.
