  • 2 hard-boiled eggs, halved
  • 1/4 cup roasted chickpeas
  • 1 cup mixed raw veggies (carrot sticks, cucumber rounds, bell pepper strips, snap peas)
  • 1/4 cup whole-grain crackers
  • 1/4 cup air-popped popcorn
  • 1/3 cup Greek yogurt ranch dip
  • 2 tablespoons hummus
  • 1/2 cup mixed berries (strawberries, blueberries, or raspberries)
  • 1 small apple, sliced
  • 1 tablespoon dark chocolate chips (optional, 70% cacao or higher)
  • Fresh herbs like parsley or dill (optional, for garnish)
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Prep the protein components: If making hard-boiled eggs, place eggs in a small saucepan, cover with cold water, bring to a boil, then cover and remove from heat. Let sit for 9 minutes for jammy yolks or 12 minutes for fully set. Transfer to an ice bath. Once cool, peel and halve lengthwise. For the turkey, simply roll each slice into a tight cylinder.
  2. Roast the chickpeas (if making from scratch): Preheat oven to 400°F (200°C). Drain and rinse a can of chickpeas, pat very dry. Toss with 1 tablespoon olive oil, salt, pepper, and spices (smoked paprika and garlic powder recommended). Spread on a sheet pan and roast for 25-30 minutes, shaking halfway through, until golden and crunchy. Let cool completely.
  3. Make the Greek yogurt ranch dip: In a small bowl, combine 1/3 cup plain Greek yogurt with 1 teaspoon ranch seasoning (or more to taste). Stir until smooth. Taste and adjust with a pinch of salt or a squeeze of lemon if needed.
  4. Prep the veggies and fruit: Wash and dry all produce. Cut carrots and cucumbers into sticks or rounds. Slice bell peppers into thin strips. Halve snap peas if large. For the apple, slice into thin wedges and toss with a little lemon juice to prevent browning. Rinse and dry berries gently.
  5. Arrange the board: Place small bowls for dips and hummus on the board or platter. Group ingredients in clusters around the bowls. Place turkey roll-ups in one section, egg halves in another. Fill gaps with veggies, crackers, popcorn, and roasted chickpeas. Add berries and apple slices in a separate cluster. Sprinkle dark chocolate chips in a small pile or scatter lightly.
  6. Add finishing touches: Sprinkle flaky sea salt over eggs and roasted chickpeas. Garnish with fresh herbs if using. Serve immediately at room temperature, or refrigerate for up to 2 hours before serving (add crackers and popcorn just before serving to keep them crunchy).
