Healthy Meal-Prep Overnight Oats with Chia Peach Almond Butter

A quick and easy overnight oats recipe combining rolled oats, chia seeds, fresh peaches, and almond butter for a creamy, nutritious breakfast that’s perfect for meal prep.

  • 1 cup (90g) old-fashioned rolled oats
  • 2 tablespoons (20g) chia seeds
  • 2 tablespoons (32g) almond butter, natural and unsweetened
  • 1 cup (240ml) milk of choice (unsweetened almond milk, dairy, or oat milk)
  • 1 medium fresh peach, diced (or frozen peaches, thawed)
  • 1 tablespoon (20g) honey or maple syrup (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine 1 cup rolled oats, 2 tablespoons chia seeds, and a pinch of salt. Stir to distribute evenly.
  2. Add 2 tablespoons almond butter to 1 cup milk of choice. Whisk or stir vigorously until smooth and fully incorporated.
  3. Stir in 1 teaspoon vanilla extract and 1 tablespoon honey or maple syrup if using.
  4. Pour the almond butter mixture into the oat and chia seed bowl. Mix thoroughly to coat evenly.
  5. Dice 1 medium peach into small pieces, reserving a few slices for topping if desired.
  6. Gently fold the diced peaches into the oat mixture.
  7. Divide the mixture evenly into 2 to 3 mason jars or airtight containers. Seal tightly and refrigerate for at least 6 hours or overnight.
  8. In the morning, stir the oats. Optionally, add an extra drizzle of almond butter or fresh peach slices on top. Enjoy cold or warm briefly in the microwave for about 30 seconds.

Notes

If oats are too thick in the morning, stir in a splash more milk to loosen. Use ripe but firm peaches to avoid watery oats. Stir almond butter with milk first to prevent clumps. Can be warmed briefly if preferred. Store in fridge up to 4 days or freeze for longer storage.
