A healthier twist on classic pumpkin pie, featuring a creamy filling made with blended cottage cheese and a crunchy almond flour crust, topped with a homemade salted caramel drizzle. It’s indulgent-tasting but secretly good for you.

Ingredients

Scale
  • 1 ½ cups almond flour
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon maple syrup
  • ¼ teaspoon salt
  • 1 can (15 oz) pumpkin puree
  • 1 cup cottage cheese
  • ⅓ cup maple syrup
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • ¼ cup coconut cream
  • 2 tablespoons maple syrup
  • 2 tablespoons coconut oil
  • ½ teaspoon flaky sea salt
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until it looks like wet sand and holds together when pressed.
  3. Press the crust into a 9-inch pie dish evenly across the bottom and up the sides. Prick the bottom a few times with a fork.
  4. Bake the crust for 10-12 minutes until lightly golden and fragrant. Let it cool on a wire rack.
  5. In a blender, combine pumpkin puree, cottage cheese, maple syrup, eggs, vanilla, pumpkin pie spice, and salt. Blend on high for 30-45 seconds until completely smooth.
  6. Pour the filling into the cooled crust and spread evenly. Tap the dish gently on the counter to release air bubbles.
  7. Bake for 40-45 minutes until the edges are set but the center still jiggles slightly. Cool completely at room temperature for at least 2 hours, then refrigerate for at least 4 hours or overnight.
  8. For the caramel: In a small saucepan, combine coconut cream, maple syrup, and coconut oil. Warm over low heat, whisking constantly, until smooth. Remove from heat and stir in sea salt and vanilla. Let cool to room temperature.
  9. To serve: Drizzle the caramel over the chilled pie, slice, and add an extra pinch of flaky sea salt if desired.

Notes

Don’t skip the chilling step—it firms up the pie and develops the flavor. Blend cottage cheese thoroughly for a silky texture. For a vegan version, use silken tofu and flax eggs.
