Healthy Turkey Chili Recipe for Easy Game Day Dinner

This healthy turkey chili is a crowd-pleaser that’s packed with protein and fiber, made easy in the slow cooker. It’s the perfect game day dinner that’s both satisfying and good for you.

  • 1.5 pounds lean ground turkey (93/7)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 2 cans (14.5 ounces each) fire-roasted diced tomatoes, undrained
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 chipotle pepper in adobo sauce, minced, plus 1 teaspoon adobo sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, diced avocado, fresh cilantro, sliced jalapeños, chopped green onions, tortilla chips

Instructions

  1. Brown the turkey: Place a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Drain off excess fat, leaving a little for flavor.
  2. Sauté the aromatics: Add the diced onion and both bell peppers to the skillet with the turkey. Cook for 4-5 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
  3. Bloom the spices: Sprinkle the chili powder, cumin, smoked paprika, and dried oregano over the turkey and vegetables. Stir well and cook for 1 minute.
  4. Transfer to slow cooker: Carefully transfer the turkey and vegetable mixture to a 6-quart slow cooker.
  5. Add remaining ingredients: Add the undrained diced tomatoes, crushed tomatoes, drained and rinsed black beans and kidney beans, chicken broth, minced chipotle pepper, and adobo sauce. Stir well to combine.
  6. Season and cook: Add salt and black pepper. Stir once more. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Taste and adjust: Before serving, taste and adjust seasoning as needed.
  8. Serve and garnish: Ladle into bowls and top with desired garnishes. Serve with warm tortilla chips.

Notes

For a thicker chili, mash some beans against the side of the pot or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and cook on HIGH for 15-20 minutes. This chili tastes even better the next day. To make it vegetarian, omit the turkey and add an extra can of black beans and a can of pinto beans.
