This homemade Baileys Irish Cream is a velvety, fresh emulsion that tastes like the holidays in a glass. It’s an incredibly quick and easy recipe made with simple, real ingredients, perfect for gifting or sipping by the fire.

Ingredients

Scale
  • 1 ½ cups (355 ml) Irish Whiskey
  • 1 can (14 oz) Sweetened Condensed Milk
  • 1 ¼ cups (300 ml) Heavy Cream
  • 2 tablespoons Chocolate Syrup
  • 1 teaspoon Instant Coffee Granules
  • 1 teaspoon Vanilla Extract
  • A Pinch of Sea Salt

Instructions

  1. Dissolve the instant coffee granules in 1 tablespoon of hot water. Stir until completely dissolved and set aside to cool slightly.
  2. Add the sweetened condensed milk, heavy cream, chocolate syrup, cooled coffee mixture, vanilla extract, and a pinch of sea salt to a blender.
  3. Blend on low speed for about 15-20 seconds, just until everything is combined and smooth.
  4. With the blender running on its lowest setting, slowly pour in the Irish whiskey.
  5. Once all the whiskey is added, increase the speed to medium and blend for another 20-30 seconds until the mixture is thick, creamy, and completely homogenous.
  6. Using a funnel, carefully pour the finished liqueur into clean bottles or jars, leaving a little headspace.
  7. Refrigerate for at least 24 hours, preferably 48 hours, to allow the flavors to meld and mellow.

Notes

The emulsion is key; blend well for a stable mixture. Don’t over-blend or you might whip the cream. Let the liqueur rest in the fridge for at least 24 hours for best flavor. Shake before serving as natural separation can occur over time.
