Homemade Pumpkin Spice Cold Foam Iced Coffee - featured image

This quick and easy recipe uses a simple shaking method to create silky cold foam without any fancy equipment. Made with real pumpkin and warm spices, it delivers coffee shop-worthy flavor in under 5 minutes.

Ingredients

Scale
  • 1/2 cup water
  • 1/2 cup granulated sugar (or coconut sugar)
  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup cold whole milk (2% works too)
  • 2 tablespoons pumpkin spice syrup (for cold foam)
  • 1 tablespoon heavy cream (optional)
  • 1 cup strong brewed coffee, cooled (or 2 shots of espresso)
  • 1 cup ice cubes
  • 2 tablespoons pumpkin spice syrup (for iced coffee, adjust to taste)
  • 1/4 cup milk of choice (optional, for creamier base)

Instructions

  1. Make the pumpkin spice syrup: In a small saucepan over medium heat, combine 1/2 cup water, 1/2 cup sugar, 2 tablespoons pumpkin puree, 1 teaspoon pumpkin pie spice, and a pinch of salt. Whisk constantly until the sugar dissolves and the mixture comes to a gentle simmer — about 3-4 minutes. Remove from heat, stir in 1/2 teaspoon vanilla extract, and let it cool for 5 minutes. Strain through a fine-mesh sieve if desired.
  2. Brew and cool your coffee: While the syrup cools, brew 1 cup of strong coffee. Let it cool to room temperature — about 10 minutes. For best flavor, make the coffee ahead of time and refrigerate it.
  3. Prepare the cold foam: In a mason jar, combine 1/2 cup cold whole milk, 2 tablespoons of the cooled pumpkin spice syrup, and 1 tablespoon heavy cream if using. Screw the lid on tight and shake vigorously for 45-60 seconds until thick and velvety.
  4. Assemble the drink: Fill a tall glass with 1 cup of ice cubes. Pour in the cooled coffee, leaving about 2 inches of space at the top. If desired, add 1/4 cup of milk. Stir in 2 tablespoons of the pumpkin spice syrup, adjusting to taste.
  5. Top with cold foam: Slowly spoon the cold foam over the iced coffee. Garnish with a pinch of pumpkin pie spice or cinnamon if desired.
  6. Serve immediately: Enjoy right away while the cold foam is thick and the coffee is icy cold. Sip through a straw for layers of flavor.

Notes

Use cold milk for the best foam. Don’t overshake — 45-60 seconds is ideal. Strain the syrup for a smoother drink if desired. Adjust sweetness gradually. Make extra syrup to keep in the fridge for up to 2 weeks. Ensure coffee is completely cool before adding to ice to prevent dilution.
