Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef (85/15)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 8–10 lasagna noodles, broken into 2-inch pieces
  • 1/2 cup heavy cream (optional)
  • Salt and black pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up, until browned (5-6 minutes). Do not drain fat.
  2. Add diced onion and cook for 2-3 minutes until softened. Add minced garlic, oregano, basil, and red pepper flakes (if using); cook 30 seconds until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Stir, scraping up browned bits from the bottom. Bring to a boil over high heat.
  4. Add broken lasagna noodles, stirring to submerge. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring once halfway through, until noodles are tender but al dente.
  5. While soup simmers, mix ricotta, mozzarella, Parmesan, and parsley (if using) in a small bowl. Season with a pinch of salt and pepper. Set aside at room temperature.
  6. Remove pot from heat. If using heavy cream, stir it in. Taste and adjust salt and pepper as needed.
  7. Ladle soup into bowls. Top each with a generous spoonful of the cheese mixture. Do not stir; let it melt slowly into the soup as you eat.

Notes

If soup thickens upon standing, add a splash of chicken broth or water when reheating. For best results, let cheese topping sit at room temperature while soup simmers. Cook noodles just until al dente as they will continue to soften in hot broth.
