Ingredients

Scale
  • 1 cup (2 sticks, 226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) apple cider concentrate, thawed
  • 2 cups (250g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • For the cinnamon-sugar coating:
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon (8g) ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3 minutes with an electric mixer on medium speed. Scrape down sides as needed.
  3. Beat in egg, vanilla extract, and apple cider concentrate until combined. Mixture may look slightly curdled.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed just until no streaks of flour remain. Do not overmix. Dough will be soft and slightly sticky.
  6. In a small bowl, stir together ¼ cup granulated sugar and 1 tablespoon cinnamon for coating.
  7. Using a cookie scoop or spoon, portion out rounded tablespoons of dough. Roll each into a ball, then roll in cinnamon-sugar mixture until fully coated. Place on prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10 to 12 minutes, rotating pans halfway through. Cookies should look puffed and slightly cracked on top with golden edges; centers will look slightly underdone.
  9. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For thicker, chewier cookies, chill the scooped dough balls for 20 minutes before baking. To toast cinnamon for coating, heat in a dry pan over medium heat for 30 seconds until fragrant, then cool before mixing with sugar. Store in an airtight container at room temperature for up to 5 days; place a slice of bread in the container to keep cookies soft. Freeze baked cookies for up to 3 months, or freeze unbaked dough balls and bake from frozen, adding 2-3 minutes to bake time.
