Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons instant coffee granules
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1/3 cup powdered sugar
  • 2 tablespoons crushed candy canes or peppermint candies (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Melt the chocolate chips. Place 1/2 cup semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth. Set aside to cool slightly.
  3. Cream the butter and sugars. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2 minutes with an electric mixer on medium speed. Scrape down the sides of the bowl.
  4. Add the wet ingredients. Beat in the egg, vanilla extract, and peppermint extract until well combined.
  5. Mix the dry ingredients. In a separate small bowl, whisk together the flour, cocoa powder, instant coffee granules, baking powder, and salt.
  6. Combine wet and dry. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  7. Fold in the melted chocolate. Pour the cooled melted chocolate into the dough and fold it in gently with a rubber spatula until fully incorporated.
  8. Prepare the coating. In a small shallow bowl, combine the powdered sugar and crushed candy canes. Mix together with a fork.
  9. Shape the cookies. Scoop tablespoon-sized portions of dough (about 1.5 tablespoons each) and roll them into balls. Roll each ball generously in the powdered sugar mixture, making sure every surface is coated.
  10. Bake. Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the cookies have spread and the tops are crinkled. The centers should still look slightly soft and puffy.
  11. Cool. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire cooling rack to cool completely.
  12. Repeat. If baking in batches, let the baking sheet cool completely before placing more dough balls on it.

Notes

For best results, use room temperature ingredients. Don’t skip the instant coffee—it deepens the chocolate flavor without making the cookies taste like coffee. If the dough is too sticky, chill it for 15 minutes. Do not overbake; cookies should look slightly underdone when removed from the oven. The cookies taste even better the next day as flavors meld.
