This warm, cheesy queso dip features a fun spiderweb design made with sour cream that takes just minutes to create. It’s a simple, crowd-pleasing Halloween appetizer that kids and adults love, made with real cheddar cheese and green chiles.

Ingredients

Scale
  • 1 pound block sharp cheddar cheese, freshly grated
  • 1 tablespoon unsalted butter
  • 1 cup whole milk
  • 1 can (4 ounces) diced green chiles, drained
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin (optional)
  • 1/4 teaspoon salt, or to taste
  • Pinch of cayenne pepper (optional)
  • 1/2 cup sour cream (full-fat)
  • 1 small black olive, sliced (for spider decoration)
  • Tortilla chips for serving

Instructions

  1. Grate the 1-pound block of sharp cheddar cheese on the large holes of a box grater to get about 4 cups of shredded cheese. Do not use pre-shredded cheese.
  2. Place a medium saucepan over medium heat and melt 1 tablespoon of butter. Swirl the pan occasionally; do not let the butter brown.
  3. Add 1 cup of whole milk, 1/2 teaspoon garlic powder, 1/4 teaspoon cumin (if using), and 1/4 teaspoon salt. Whisk to combine and heat until small bubbles form around the edges (about 2 minutes). Do not let it boil.
  4. Add the grated cheese one handful at a time, stirring constantly with a wooden spoon or silicone spatula. Wait until each handful is mostly melted before adding the next.
  5. Once all cheese is melted and the queso is smooth and glossy, stir in the drained green chiles. Cook for about 30 seconds until fully incorporated.
  6. Pour the queso into a shallow serving bowl or pie plate. Let it cool for 2-3 minutes until warm but not piping hot.
  7. Spoon the 1/2 cup of sour cream into a piping bag or zip-top bag. If using a zip-top bag, squeeze the sour cream into one corner and snip off a tiny piece (about 1/8 inch) from the corner.
  8. Pipe a small circle of sour cream in the center of the queso. Pipe a larger circle around it, about 1 inch from the edge. Pipe a third circle halfway between the center and the edge.
  9. Using a toothpick or the tip of a knife, drag from the center outward through all the circles. Wipe the toothpick clean, then drag from the outer edge inward through all the circles. Repeat every inch or so around the queso to create a spiderweb pattern.
  10. Place one black olive slice in the center of the web. Arrange eight thin strips of olive around it to look like spider legs, or place a plastic spider ring on top.
  11. Serve immediately with tortilla chips.

Notes

For best results, use freshly grated block cheese—pre-shredded cheese contains anti-caking agents that make the queso grainy. Keep the sour cream cold for piping to help the spiderweb hold its shape. The queso base can be made a day ahead and reheated gently with a splash of milk; add the spiderweb just before serving.
