A quick and easy strawberry shortcake trifle for two, featuring layers of fresh strawberries, tender cake, and a light mascarpone whipped cream. Perfect for date nights or a simple summer dessert.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled and sliced
  • 1 ½ cups store-bought pound cake or angel food cake, cut into 1-inch cubes
  • 1 tablespoon granulated sugar
  • 1 teaspoon fresh lemon juice
  • ½ cup heavy cream, cold
  • 2 tablespoons mascarpone cheese
  • 1 tablespoon powdered sugar
  • ½ teaspoon vanilla extract
  • Fresh mint leaves (optional, for garnish)
  • Extra strawberry slices (optional, for garnish)
  • Shaved white chocolate or powdered sugar (optional, for garnish)

Instructions

  1. Macerate the strawberries: In a small bowl, combine the sliced strawberries with the granulated sugar and lemon juice. Toss gently to coat, then set aside for 10-15 minutes.
  2. Whip the cream: Pour the cold heavy cream into a chilled mixing bowl. Add the mascarpone, powdered sugar, and vanilla extract. Start mixing on low speed, then increase to medium-high until soft peaks form (about 2-3 minutes).
  3. Check cream texture: Stop before over-whipping; the cream should be billowy and soft, not stiff. If over-whipped, fold in a tablespoon of un-whipped cream.
  4. Prepare the cake cubes: Cut the pound cake or angel food cake into rough 1-inch cubes. If very fresh, freeze for 5 minutes to help them hold shape.
  5. Layer the trifles: Start with a spoonful of macerated strawberries and their juice at the bottom of each glass. Add a layer of cake cubes, pressing gently. Spoon a generous layer of whipped cream over the cake. Repeat layers (strawberries, cake, cream) until glasses are full, aiming for 2-3 complete layers.
  6. Finish with garnish: Top each trifle with a dollop of cream, reserved strawberry slices, and a mint leaf if desired. Optionally, shave white chocolate or dust with powdered sugar.
  7. Chill before serving (optional but recommended): Refrigerate for 15-30 minutes to allow flavors to meld. Serve immediately if desired.

Notes

For best results, chill the mixing bowl and beaters before whipping cream. Macerating strawberries is essential for flavor and moisture. Assemble no more than 2-3 hours before serving for optimal texture. For a dairy-free version, use full-fat coconut cream and vegan cream cheese. For gluten-free, use gluten-free cake.
