Cranberry Rosemary Prosecco Cocktail - featured image

A bright, bubbly holiday cocktail that balances tart cranberry, herbal rosemary, and crisp Prosecco. Ready in under 5 minutes, it’s perfect for Thanksgiving, Christmas, or New Year’s Eve.

Ingredients

Scale
  • 1/2 cup fresh cranberries, plus extra for garnish
  • 3–4 fresh rosemary sprigs, plus extra for garnish
  • 2 tablespoons honey or agave syrup
  • 2 tablespoons fresh lemon juice (about half a lemon)
  • 1 bottle Prosecco or dry sparkling wine, chilled
  • 1 ounce orange liqueur (optional, such as triple sec or Cointreau)
  • Ice cubes (for serving)
  • Optional garnishes: sugared cranberries, lemon twists, or edible flowers

Instructions

  1. Make the rosemary simple syrup: In a small saucepan, combine 1/2 cup water, 1/2 cup honey (or agave), and 3-4 fresh rosemary sprigs. Bring to a gentle simmer over medium heat, stirring occasionally until the honey dissolves completely. Reduce heat to low and let steep for 5-7 minutes until the liquid smells intensely of rosemary and turns pale golden. Remove from heat, let cool completely, then strain out the rosemary sprigs. Store in a jar in the fridge for up to two weeks.
  2. Prepare the cranberries: Rinse fresh cranberries and pat dry. Set aside a few whole berries for garnish. For each cocktail, use about 1/4 cup of cranberries.
  3. Muddle the cranberries: Place the cranberries in the bottom of a cocktail shaker. Add 1 tablespoon of the rosemary simple syrup and the fresh lemon juice. Using a muddler or the back of a wooden spoon, gently press down on the cranberries until they burst and release their juice (about 75% popped). Do not over-muddle to avoid bitterness.
  4. Shake it up: Fill the cocktail shaker with ice cubes. Add the orange liqueur if using. Secure the lid tightly and shake vigorously for 15-20 seconds until the shaker feels frosty cold.
  5. Strain into glasses: Place a fine-mesh strainer over a champagne flute or wine glass. Pour the shaken mixture through the strainer to catch cranberry solids and seeds. If seeds remain, strain again.
  6. Top with Prosecco: Slowly pour chilled Prosecco into the glass, filling almost to the top. Pour at a 45-degree angle down the side to preserve carbonation.
  7. Garnish and serve: Gently rub a fresh rosemary sprig between your fingers to release oils, then slide it into the glass. Add a few whole cranberries. Serve immediately within 10-15 minutes for best experience.

Notes

For a pitcher version, multiply all ingredients by 8. Combine muddled cranberry mixture, rosemary simple syrup, lemon juice, and orange liqueur in a large pitcher. Refrigerate until ready to serve. When guests arrive, fill pitcher with ice, then top with entire bottle of Prosecco. Stir gently and serve immediately. The rosemary simple syrup can be made weeks in advance and stored in the fridge. For a non-alcoholic version, swap Prosecco for sparkling water or non-alcoholic sparkling wine.
