A crisp, not-too-sweet twist on the classic mimosa, featuring tart apple cider, dry sparkling wine, and a warm cinnamon-sugar rim. Ready in under five minutes, it’s the perfect fall brunch cocktail.

  • 1 cup (240 ml) chilled apple cider
  • 1 cup (240 ml) chilled dry sparkling wine or Champagne (e.g., Prosecco or Cava)
  • 1 tablespoon ground cinnamon
  • 2 tablespoons granulated sugar
  • Apple slices (for garnish, e.g., Honeycrisp or Granny Smith)
  • Cinnamon sticks (optional, for garnish)
  • 12 teaspoons honey or maple syrup (optional, for extra sweetness)

Instructions

  1. Prepare the cinnamon sugar rim: In a small shallow dish, combine 1 tablespoon ground cinnamon with 2 tablespoons granulated sugar. Mix with a fork until evenly distributed.
  2. Moisten the glass rims: Run a lemon wedge or damp pastry brush along the outside edge of each chilled champagne flute. Avoid getting the inside wet.
  3. Coat the rims: Gently twist each moistened rim into the cinnamon sugar mixture until evenly coated. Tap lightly to remove excess sugar. Set aside.
  4. Add the apple cider: Fill each prepared flute about one-third full with chilled apple cider (about 1/4 cup or 60 ml per standard flute).
  5. Optional sweetener: If desired, add 1/2 to 1 teaspoon honey or maple syrup to the cider and stir gently to dissolve.
  6. Top with sparkling wine: Slowly pour chilled sparkling wine into the glass, tilting it slightly to preserve bubbles. Fill to about an inch from the top (roughly 1 part cider to 2 parts wine).
  7. Garnish and serve: Place a thin apple slice on the rim of each glass (make a small slit from edge to center to secure it). Add a cinnamon stick if desired. Serve immediately.

Notes

Chill all ingredients and glasses thoroughly before assembling to keep bubbles lively. Rim glasses just before serving to prevent the sugar from becoming sticky. For a non-alcoholic version, substitute sparkling wine with non-alcoholic sparkling wine or sparkling water. For a party, mix cider and wine in a pitcher and let guests rim their own glasses.
